Mom's Streusel Filled Coffee Cake

This recipe developed by Jules at Inn on the Rio was featured in "Best from New Mexico" Cookbook and "Inn on the Rio's Favorite Recipes" Cookbook!

This recipe has been in my family for generations. I can't remember celebrating a holiday and not having "Mom's" Coffee Cake warm from the oven. My guests at the Inn love this recipe.

Cake Ingredients
3-1/2 cups Flour
1 TB baking powder
1 tsp. salt
1-1/2 cups sugar
1/2 cup shorting, such as Crisco
2 eggs
1 cup milk
1 TB vanilla

Filling + Topping
1 cup brown sugar
2 TB cinnamon
1/3 cup (one-third cup) flour
1/3 cup (one-third cup) melted butter
1 cup chopped nuts
mix above ingredients together with a fork

  1. Place half of the batter in the bottom of a greased Spring Form Pan.
  2. Add half of the streusel, add the rest of the batter and top with remaining topping.
  3. Bake in a pre-heated oven at 350 degrees about 45 minutes.
